Method
- Rinse the chicken and remove any organs than may be left
- Pat dry with a paper towel and place in the cast iron pan (breast side up)
- Coat the chicken with coconut oil (melted or solid)
- Season the chicken with salt, Greek seasoning and onion powder
- Place in an oven at 450o F for about 2 hours. Check internal temperature of the bird. Making sure the meat always registers at or above 165 degrees F.
